A stroll along the north side of the Sierra de Collserola allowed
us to discover in 2007 an olive field of the Arbequina variety,
so well kept that presaged obtaining oil exceptional. Jaume Garriga
achieved, through knowledge and a determination capable of sacrificing
quality for quantity, to obtain a unique and extra virgin olive
oil with a distinct fruity aroma, a deep green color and a taste
at once delicate and intense. The production is usually low, about
2,500 kg. and sold primarily in the first moments after the harvest.

cold pressing in order to retain every ingredient in the olive
oil. We use granite stones of 1952 for the elaboration process
making it a craft manufacture. This process, which is almost unique
in Spain, is slow and the production is very little but the very
high quality of the oil obtained is our goal.We have two different
kinds of extra virgin olive oil depending whether it originates
from traditional or organic farming, but all the oil we process
is from the first cold pressing. Our olive oil comes form the
autochthonous varieties arbequina and empeltre. You

Our extra virgin olive oil fulfills all the necessary specifications
i.e.: 1) Quality and purity regulations provided by CEE 2568/91.
2) Regulations for “first cold pressing” provided
by CEE 1019/2002. The phrase “first pressing in cold”
is only allowed on the label when the oil has been elaborated
traditionally with a hydraulic press; on the contrary its mention
is not allowed.3) Organic farming certification CEE 2092/91.4)
Organic certifier: the German agency OKO GARANTIE CBS (you can

olive oil with the highest quality from our own harvest. The farm
covers an area of more than 500 Ha planted with olive and almond
trees, irrigated with water of excellent quality (600 of conductivity)
by an automated fertigation system. Each plot possesses a kind
of variety. Coupled with the implementation of the Technical Standards
of IP, all that enables Olimendros to establish a system of traceability
of his products. The mill, located in the very center of the property,
allows us to control, step by step, the crushing process in cold.
Olives are classified according to quality and variety. Only the
best quality olive oil is finally packed. Olimendros produce four
monovarietal oils from its four varieties of olives: Arbequina,

business. We are a company from Extremadura, Spain, and our work
is dedicated exclusively to our top product with an average production
of 40,000 k. Piquillo peppers are small red peppers, grown only
in certain areas of Spain and hand-picked and roasted over open
fires. The peppers are then peeled and packed in jars or tins.
The roasting of the pepper gives it a rich, spicy-sweet flavor.
They can be stuffed as a tapa or included in soups as well as
other dishes.
